Egg Omelette Muffins coming right up!!!


After trying these out for the first time, I couldn’t wait to share these with all of you! These egg omelette muffins are perfect for those of you on a weight loss journey because they contain a great source of protein, healthy fats, & veggies! Protein intake is super important for maintaining lean muscle, especially when you are in a calorie deficit (intaking less calories than you burn in an effort to lose body fat). A few things I love about this recipe:

-8 grams of protein per “muffin”
-there is a lot of room for customization. You can add any veggies and spices you like!
-very kid-friendly with a perfect portion size. Plus you can “hide” veggies in them and your kids wont know! 😉
-great to have on the go when you don’t have time to cook in the morning
-6 whole eggs (if using 12 cup muffin tin use 12 eggs. You’ll be using 1 egg per cup)
-2 slices pepper jack cheese (or any other cheese)
-finely chopped veggies of your choice (I love mushrooms, onions, bell peppers, zucchini, or even broccoli slaw!)
-seasonings of choice (I usually go with garlic powder, Himalayan pink salt, & pepper)



Combine eggs in bowl and whisk until yolk and whites are incorporated. Add seasonings to taste. Spray muffin tin with nonstick spray and distribute egg evenly into each cup. Distribute chopped veggies evenly between each cup. Finally, tear slices of cheese in pieces and evenly distribute into each cup. Bake in oven at 350 degrees Fahrenheit for 20 minutes or until center of each cup is no longer “jiggly”. Be careful not to cook too long or muffins will be dry!
