Egg Omelette Muffins coming right up!!!
After trying these out for the first time, I couldn’t wait to share these with all of you! These egg omelette muffins are perfect for those of you on a weight loss journey because they contain a great source of protein, healthy fats, & veggies! Protein intake is super important for maintaining lean muscle, especially when you are in a calorie deficit (intaking less calories than you burn in an effort to lose body fat). A few things I love about this recipe:
-8 grams of protein per “muffin”
-there is a lot of room for customization. You can add any veggies and spices you like!
-very kid-friendly with a perfect portion size. Plus you can “hide” veggies in them and your kids wont know! 😉
-great to have on the go when you don’t have time to cook in the morning
-6 whole eggs (if using 12 cup muffin tin use 12 eggs. You’ll be using 1 egg per cup)
-2 slices pepper jack cheese (or any other cheese)
-finely chopped veggies of your choice (I love mushrooms, onions, bell peppers, zucchini, or even broccoli slaw!)
-seasonings of choice (I usually go with garlic powder, Himalayan pink salt, & pepper)
